Glycation or Non-Enzymatic Glycosylation is a natural process in which the sugar in your bloodstream attaches to proteins, forming harmful new molecules called advanced glycation end products. It may occur either inside the body, called-endogenous glycation or outside the body, called- exogenous glycation. Glycation is normally governed by enzymatic activity, which is necessary to regulate the metabolic functioning of molecules. It is a haphazard process that impairs the functioning of biomolecules, whereas glycosylation occurs at defined sites on the target molecule and is required in order for the molecule to function.
