Phytofluene is a carotenoid pigment found naturally in plants, most notably tomatoes, red carrots, and watermelons. It is a colorless carotenoid present in tomatoes and other vegetables naturally. It is the second step in the biosynthesis of carotenoids. It is a member of the carotenoid family, which also contains beta-carotene, lycopene, and lutein. It is synthesized from phytoene by a desaturation reaction that results in the creation of five conjugated double bonds.

Carotenoids are natural pigments that give many fruits and vegetables their distinctive red, orange, and yellow hues.
